Free radicals are destructive, charged chemicals which are the results of body processes such as breathing, digestion, and by smoking. They roam in the bloodstream and readily bond with LDL bad cholesterol particles. After bonding the LDL particles are more toxic to the blood vessel walls and can penetrate them more easily and deposit cholesterol. Antioxidants protect against free radicals by neutralizing them. ORAC (Oxygen Radical Absorbance Capacity) provides a measure of the antioxidant ability of a food.
